Has anyone changed their sound to light mic on their DMX controller for a 3.5mm jack socket? if so how did you wire it and was there any other circuitry required for signal/level/voltage matching?

i guess microphones are as different as lasermodules, so rhe requrements differs from what you plan to use. I this case you know what the receiving end needs to be fed, so the challange is the input end.
Also one question arises: Why?
I'm guessing he wants to put the mic somewhere away from the projector.
That little mic capsule is an electret mic. It has in internal FET (transister) that needs a voltage to work.
I would suggest carefully removing the mic capsule and examining it. Some have 2 leads and some have 3. The capsule body will be tied to one of them. This is like ground. I would bet your mic has only 2 leads.
The simplest list of parts required to make an electret mic work are a mic capsule, a battery, a capacitor (usually tantalum about 10uF) and a resister (usually about 1K to 3.5K to limit battery current. The battery powers the mic in series with the resister and the cap decouples the DC battery voltage from the audio signal. So it is possible to power the mic from either end of a 2 conductor wire (center and shield).
The DMX board must be providing power to your mic.
Computer sound cards are designed to power electret mics.

All software has a learning curve usually proportional to its capabilities and unique features. Pointing with a mouse is in no way easier than tapping a key.
I have fiddled around with similar, are you trying to drive a line level in to it?

I'm not trying to extend the mic, I want to replace it (you nailed it Yag) with a mono line input (I'm assuming the mic is mono). This is so I can listen to music through headphones and still have a 'sound to light' light show going on.
How did you get on with yours Yag?
