If projector is all metal, and thus crudely shielded, not much. If all plastic, other rules apply. If wire is coming out of a metal projector into a plastic region where it could be exposed to cell phone radiation or the RF hash of a night club, then run a two conductor shielded wire with shield to case ground. Only ground the shield at ONE end of the cable, leave the other floating. (Yep, I said case ground, its a dc-low frequency signal, not a differential galvo signal, Case is just fine)

It's metal (steel + aluminum), but just to be on the safe side I can do that. Is this a general rule of thumb for all signal cables or special care taken with therimstor cables?
There is a whole art to grounding projectors. I see you have opened another thread...
In the case of the thermistor, ANY shielding is usually more then enough as the thermistor is a current based signal, not a voltage based one.. Plus the rate of signal change is on the order of seconds or tens of seconds. That long term decision making process tends to average out 50/60 Hz noise.
