Attached an image of a "laser-cut-samples"-ball - the thickest part has 25mm ... the thickest water-jet cut plate I've seen at the application-center in one of my old jobs had maybe 150mm

This really depends on how thick the metal is.
If you're cutting basically thin sheet metal, I think the laser wins in terms of speed and accuracy. But if you're cutting inch and a half thick plate steel, then the water jet is going to be the winner by far.

PS: Didn't see Viktor's post above. I'm surprised he got such good results on the laser even with 1 inch steel. That has to be close to the maximum thickness... But yeah, you can cut through a foot of steel with a water jet if you need to.
... by the way - here some water-cut parts from aluminium (and one from carbon) -- and the right "whitish" eagle is even "water-jet-engraved"!
Have some micro-waterjet-cut parts too (where the cut width is around 0,1mm and up to 10mm deep), but have to find them.
The "thick" iron laser-cut parts were from a company, I was coworking with -- this was a 6kW laser with a special gas-mixture at roughly 20bar flow pressure for "clean cutting" ...

... found the "micro-waterjet-cut" parts too -- here in comparison on the "water-jet-engraved eagle" - you can see the In-/Out- and cut-width at the "misbehaved" hexagon.
This was not 0,1mm, but more like 0,2 for the "abrasive load", meant to cut through 20mm aluminium ...

The mini jet water cutter is more my speed. Want to cut parts for a working radial engine I’m building. 1/4 scale r2800....fully working. If I don’t have to Cnc 6 months. If I do 2 years!
... how thick are the sheets and which detail accuracy?
