Seems like even with this controllers ability to use some math to predict and overcome oscillation overshoot etc. That the peltiers would be going through some unwanted fluctuations.
Seems that what melcor did was to build a Pulse Width Modulated drive board that was controlled by this very type panel mount pid controller.
I have an 800 watt thermoelectric unit that controls water to some industrial equipment it also uses one of these pid panelmount controls. I just need the interface circuit between the power supply this and my peltiers the 800watt unit has a long row of mosfets used to drive the milspec connector connected bank of peltiers.

you can get PIDs with PWM output and 0-5 outputs, no problem at all.
nice thing about the PIDs, displays! Diagnostics! and .1' or better resolution.
