the cube will be placed on the mm1 that is not at a 45..

Question, Does anyone think using a MM1 to hold the PBS is way overkill for this project?

You absolutely need the second MM1. You want adjustment on both the bounce mirror *and* the PBS cube, thus you need a pair of MM1's.
Use the bounce mirror mount to tweak the near-field alignment of the two beams, and use the PBS cube mount to tweak the far-field alignment.

go over to thorlabs and look at "prism tables", modified MM2s with a lip on them, A little easier to adjust.
